In the past, when the went off to do some threshing on a neighbour's property, the Buzet Winemakers would always set out with a bottle (or more!) of white wine. Their own wine. So good, so famous, that François 1st couldn’t eat a fish or shellfish without it. But everything changes and the vinification method was forgotten, perhaps at the time of the phylloxera crisis. And yet nothing is lost. Ever. And the method was rediscovered. Like its cousins, the red and the ros?, the recipe for Tradition white was rediscovered in the attic. Still just as good and still the same lively colour...
